A method for the determination of small quantities of mixed reducing sugars and its application to the estimation of the products of hydrolysis of starch by taka-diastase.

چکیده
PRELIMINARY investigations on the carbohydrates in the developing apple have shown that the concentration of sugars in the fruit is less than 1 % during the first weeks of growth, and further, that the maximum starch concentration reached at any time is only about 2 %. Estimation of these carbohydrates by the usual methods would require the collection of a very large number of apples, especially in the early stages of development, when the fruit is small, with the resultant risk that the crop on any tree would be so seriously depleted that the development of the remaining fruit might be abnormal. Since starch appears to be most satisfactorily estimated by determination of the glucose and maltose produced by hydrolysis with taka-diastase, a method for the estimation of small quantities of reducing sugars has been investigated. With such a method, determinations of starch could be carried out during the development of the apple, and furthermore, a delicate method of estimation of reducing sugar would enable the size of the samples required for sugar determination on the young and very small fruits to be kept within reasonable limits.

Behavior of dextrins towards taka-diastase.
That taka-diastase, when allowed to react under the appropriate conditions, will hydrolyze starch and maltose completely or almost completely to glucose has been known for some time (2, 9). It might, therefore, be expected that dextrins, which are intermediates in the hydrolytic breakdown of starch to maltose, should be similarly susceptible to taka-diastase. Results contrary to this expectatio...
متن کاملEnzymatic degradation of Poly (ε-Caprolactone) and Starch blends bontaining SiO2 nanoparticle by Amyloglucosidase and α-Amylase
The aims of the study were to investigate the effect of poly(ε -caprolactone) (PCL) and nano- SiO2 within the thermoplastic starch (TPS) blends on the rate and extent of starch enzymatic hydrolysis using enzymes α-amylase and amyloglucosidase. The results of this study have revealed that blends with nano-SiO2 content at 6 wt% exhibited a significantly reduced rate and exte...

The amounts of reducing substances produced by the action of 2 cc. of 0.1 per cent taka-diastase (in distilled water) upon 200 cc. of a boiled and autoclaved 6 per cent starch solution1 at 34°C. and pH 5.7 were determined by removing 10 cc. samples at intervals, detroying the enzyme by boiling, and titrating the amount of copper reduced by the Bertrand method (1). Viscometric determinations (2)...

متن کاملMaltodextrin As Fat Replacer in Food Products: A Review
Partial hydrolysis of starch yields a product called maltodextrin, which has a dextrose equivalent of less than 20. Maltodextrin with a dextrose equivalent of less than 10 is used as a fat replacer in various products. Industries are constantly developing low-fat products or reducing the fat content of products as much as possible according to the wishes and tastes of consumers so that the calo...
